Instructions:

Prep:

  1. Combine all burger ingredients in a large bowl and form into four ¼ pound patties.
  2. Line a sheet pan with parchment paper. Place patties on parchment paper, cover with plastic wrap and refrigerate for 1 hour.

Cook:

  1. Pre-heat an outdoor grill with hot and medium heated sides for searing and cooking respectively.
  2. Place the burgers on the hot side of the grill and sear for 2 minutes.
  3. Without flipping the burgers, move them to the medium-heated side of the grill and cook for another 2 minutes.
  4. Flip the burgers and repeat the sear and finishing steps. A meat thermometer can be inserted into the center of the burger to check doneness.
  5. Optional: Add a slice of cheddar cheese to each burger during the last two minutes of cooking.
  6. Let burgers rest 2-3 minutes off the heat before serving.
  7. While the burgers are resting, lightly toast the onion rolls.

Serve:

  1. Top the bottom of each toasted bun with a lettuce leaf.
  2. Next, add 1-2 slices each of tomato, onion and pickles on top of the lettuce.
  3. Top the vegetables with the burger patty.
  4. Drizzle each patty with 1-2 tablespoons of the BBQ sauce.
  5. Finish it with the top of the bun.
