  • Four Sixes Ranch Brand Prime steaks are USDA certified Prime, which is unavailable in most local grocery stores.
  • Four Sixes Ranch Brand Striploin steaks are cut from the ‘Rib Half’ of the Loin sub-primal. What this means is that the ‘Sirloin End’ is not present in our Striploin steaks. The Sirloin End is known for having higher amounts of connective tissue and, as a result, requires more trimming and knifework. Steaks from this region are called ‘Vein Steaks’ and can lead to a relatively poorer eating experience. In short, the Four Sixes Ranch Striploin steaks are cut in a way that minimizes connective tissue and gristle.

I ordered a Prime steak but the package says Black Label steak. Did I receive the wrong product?

No, we recently renamed our Black Label line of steaks to Prime steaks to more clearly describe the cuts and highlight the superior USDA Certified Prime quality. As a result, some of our packaging may still say Black Label, but it is the same steak you ordered.

What is the difference between your Prime steaks and your Black Label steaks?

There is no difference between our Prime steaks and our Black Label steaks. We recently renamed our Black Label line of steaks to Prime steaks to more clearly describe the cuts and highlight the superior USDA Certified Prime quality. USDA Choice beef is high quality but has less marbling than Prime. Choice roasts and steaks from the loin and rib will be very tender, juicy, and flavorful.

USDA Prime beef is the highest USDA beef grade and is produced from young, well-fed beef cattle. It has abundant marbling (the amount of fat interspersed with lean meat) and is generally sold in restaurants and hotels. Because Prime beef has the most intramuscular fat, it is tender and juicy with a rich, beefy flavor. Prime roasts and steaks are excellent for dry-heat cooking such as broiling, roasting or grilling.

If the product is slightly thawed but cool to the touch, you should refrigerate immediately. The best way to discern if it is wholesome is to use a meat thermometer and ensure the beef is 40 degrees Fahrenheit or less.

To further enhance the safety of your beef orders, we utilize dry ice during the packaging process. Dry ice is a reliable and efficient method to keep the products frozen throughout the entire delivery journey. This ensures that when your order arrives, the beef is still in its optimal state, preserving its flavor and quality.

  • If the beef is still frozen just defrost it in your refrigerator and cook it as normal or place it in your freezer to save for future use.
  • If the beef is thawed but still below 40 degrees Fahrenheit, you can either store it in your refrigerator for up to two weeks or safely refreeze for future use. If you choose to refreeze your products, there may be slight changes in flavor and moisture when prepared.

How long will the beef stay fresh?

All beef will arrive with at least 6 months frozen shelf life remaining however once you thaw the beef you should plan to eat it within 14 days.

How long can this beef be kept in the freezer before using it?

All beef will arrive with at least 6 months frozen shelf life remaining.

Can the beef be re-frozen?

Very slight thawing of raw frozen beef may be safely re-frozen with no perceptible loss of quality or nutritional value. However, we do not recommend that you re-freeze completely thawed beef as there may be slight changes in flavor and moisture when prepared.

What temperature should I cook my steak to?

VERY RARE: 115°-120°F (46°-49°C)
RARE: 120°-130°F (49°-54°C)
MEDIUM RARE: 130°-140°F (54°-60°C)
MEDIUM: 140°-150°F (60°-66°C)
MEDIUM WELL: 150°-155°F (66°-68°C)
WELL: 155°-160°F (68°-71°C)
WELL DONE: >160°F (>71°C)

Remember to use an instant-read thermometer to gauge the “doneness” of the steak. This is the most accurate way to judge “doneness”.

Let your steak rest, ideally on a rack, for at least 5 minutes before slicing or serving. This will result in a juicier, more tender steak. 

Remove the steak from the heat source approximately 10 degrees below the desired doneness. The residual heat in the meat, while resting, will continue to cook your steak to your desired temperature.

What temperature should I cook my ground beef to?

Always cook ground beef to an internal temperature of 160 degrees Fahrenheit.

Is it microwave-safe?

It is safe, but we do not recommend cooking Four Sixes Ranch Brand Beef in the microwave.
