All Four Sixes Ranch Beef is processed in the United States. This helps ensure the consistent quality of the product you receive.

What makes the Four Sixes Ranch Beef different from the beef I can buy in my local grocery store?

Four Sixes Ranch Beef may be different from what you purchase in the local grocery store in several ways:

        • Four Sixes Ranch Beef does not have any artificial flavors or ingredients added, and the beef is minimally processed.
        • Four Sixes Ranch “Reserve” Beef steaks are USDA Certified Tender.  Four Sixes Ranch “Black Label” Beef steaks are USDA Certified Very Tender. The USDA Certified Tender/Very Tender shield is a process-verified program (processverified.usda.gov) that guarantees shoppers that the product will result in a tender eating experience. The program has been developed after years of data collection and product testing and ultimately verifies that the product you’re eating is meeting needs for a tender eating experience. Products that are USDA Certified Tender/Very Tender do not contain any additional ingredients, chemicals, flavors or tenderizers and may not be mechanically tenderized.
        • All Four Sixes Ranch Beef is a product of the USA.  This also means that the beef is harvested, processed and packaged in the United States of America.
        • Four Sixes Ranch “Reserve” and “Black Label” steaks are aged for a minimum of 21 days prior to packaging. This helps provide enhanced flavor and tenderness. The Tenderloin Tips and Medallions, although not part of the ‘Reserve’ or ‘Black Label’ programs, are also aged a minimum of 21 days.
        • Four Sixes Ranch (both Reserve and Black Label) Striploin steaks are cut from the ‘Rib Half’ of the Loin sub-primal. What this means it that the ‘Sirloin End’ is not present in our Striploin steaks. The Sirloin End is known for having higher amounts of connective tissue and, as a result, requires more trimming and knifework. Steaks from this region are called ‘Vein Steaks’ and can lead to a relatively poorer eating experience. All Four Sixes Ranch Striploin steaks are cut in a way that minimizes connective tissue and gristle.

Is Four Sixes Ranch Beef a product of the USA?

      BEEF GENERAL

What is USDA Certified Tender or USDA Certified Very Tender?

The USDA Certified Tender or Very Tender shield is a process-verified program (processverified.usda.gov) that guarantees a tender eating experience. Ongoing testing is conducted to ensure that our shoppers receive the best eating experience. This testing is used to verify the amount of force required to shear through a sample mirroring the action of chewing through a steak. These measurements allow us to verify that your steak is tender and is accomplished without the use of chemicals, marinades or mechanical tenderization.

The program has been developed after years of data collection, and product testing and ultimately verifies that the beef you receive meets the needs for a tender eating experience.

Products that are USDA Certified Tender or Very Tender do not contain any additional ingredients, chemicals, flavors or tenderizers and may not be mechanically tenderized.

What does USDA Choice mean? What does USDA Prime mean?

The USDA grade shields are highly regarded as symbols of safe, high-quality American beef. Beef is evaluated by highly-skilled USDA meat graders using a subjective characteristic assessment process and electronic instruments to measure meat attributes. These characteristics follow the official grade standards developed, maintained and interpreted by the USDA’s Agricultural Marketing Service.

USDA Prime is produced from well-fed, young cattle,. USDA Prime is the USDA’s highest grade, featuring abundant marbling (flecks of fat within the meat that makes it more flavorful).

USDA Choice beef is high quality but has less marbling than Prime. Choice roasts and steaks from the loin and rib will be very tender, juicy, and flavorful.

      What is a striploin steak?

A striploin steak is also called a New York or a Kansas City strip. This steak comes from the short loin of the beef cattle. It is cut from a muscle that does little work, the longissimus dorsi, making the meat particularly tender and juicy.

      What is a ribeye steak?

A ribeye steak is a tender, juicy, and flavorful steak from the rib section of the beef cattle. Fast cooking methods using high heat produce the most delectable results.

      What is a tenderloin steak?

A tenderloin steak, also called a filet mignon, comes from the tenderest part of the cow and is therefore greatly desired for being the most tender cut of beef. Tenderloin steaks are best cooked hot and fast.

      PRODUCT GRADE/QUALITY

How long are the steaks aged?

Four Sixes Ranch “Reserve” and "Black Label" steaks are wet-aged for a minimum of 21 days prior to packaging. This helps provide enhanced flavor and tenderness.

Aging beef is an important process that makes it tender and flavorful. Wet aging occurs when the steak is placed inside vacuum-sealed bags and refrigerated for a period of time. The bags are used to prevent exposure to air and maintain the moisture in the steak. During the aging process the meat will tenderize from the inside, producing steak that displays a distinctive flavor and tenderness only found when wet-aged.

      SHIPPING/DRY ICE/STORAGE/THAWING/FOOD SAFETY

Are these shipped frozen or fresh?

Four Sixes Beef is shipped frozen with dry ice. We ship each order with the optimal amount of dry ice for the planned days in transit, and while there may not be any dry ice present upon arrival (as it evaporates during the journey), the product should still be frozen when it arrives on your doorstep.

Is this shipped on dry ice?

Yes. We ship each order with the optimal amount of dry ice for the planned days in transit, and while there may not be any dry ice present upon arrival (as it evaporates during the journey), the product should still be frozen when it arrives on your doorstep.

My shipment arrived without any dry ice. Is it still ok to eat?

If your product arrived without any remaining dry ice, there is no need for concern as the quality has not been compromised, noting the below:
        • If the beef is still frozen just defrost it in your refrigerator and cook it as normal or place it in your freezer to save for future use.
        • If the beef is thawed but still below 40 degrees Fahrenheit you can either store it in your refrigerator for up to two weeks or safely refreeze for future use. If you choose to refreeze your products, there may be slight changes in flavor and moisture when prepared.
        • If the beef is above 40 degrees Fahrenheit, please contact our Customer Care Team.

Will the beef arrive completely frozen?

Your order should arrive completely frozen. We ship each order with the optimal amount of dry ice for the planned days in transit, and while there may not be any dry ice present upon arrival (as it evaporates during the journey), the product should still be frozen when it arrives on your doorstep.

If the product is slightly thawed but cool to the touch, you should refrigerate immediately. The best way to discern if it is wholesome is to use a meat thermometer and ensure the beef is 40 degrees Fahrenheit or less.

My product was still cold but not frozen when I received it, what do I do?

If, upon arrival, your product is over 40 degrees Fahrenheit, when measured using a meat thermometer, please contact our Customer Care Team.

What temperature should I cook my steak to?

      VERY RARE: 115°-120°F (46°-49°C)
      RARE: 120°-130°F (49°-54°C)
      MEDIUM RARE: 130°-140°F (54°-60°C)
      MEDIUM: 140°-150°F (60°-66°C)
      MEDIUM WELL: 150°-155°F (66°-68°C)
      WELL: 155°-160°F (68°-71°C)
      WELL DONE: >160°F (>71°C)

Remember to use an instant-read thermometer to gauge the “doneness” of the steak. This is the most accurate way to judge “doneness”.

Let your steak rest, ideally on a rack, for at least 5 minutes before slicing or serving. This will result in a juicier, more tender steak.

Remove the steak from the heat source approximately 10 degrees below the desired doneness. The residual heat in the meat, while resting, will continue to cook your steak to your desired temperature.

What temperature should I cook my ground beef to?

Always cook ground beef to an internal temperature of 160 degrees Fahrenheit.
